She Bakes Here has whipped up…literally…Carrot Cupcakes with Milk Free Cream Cheese Icing. The icing is made with Tofutti Better Than Cream Cheese. She adds butter/margarine, vanilla, and sugar to the mix too.

As for the carrots, the recipe calls for 1 whole pound! You might sprout big ole’ ears! Still, they look great.
