Baked Applesauce Oatmeal

Ingredients:

Oatmeal:

1 cup unsweetened apple sauce

1/2 cup Tofutti Better Than Sour Cream

1/2 cup maple syrup

2 teaspoons apple pie spice or ground cinnamon

2 teaspoons baking powder

1/2 teaspoon salt

1 teaspoon vanilla

2 1/2 cups rolled oats

Optional: 1/2 teaspoon almond extract

Optional garnishes: dried apple slices and star anise

Creamy Drizzle (recipe follows)

Directions:

Preheat oven to 350 degrees. Spray an 8 or 9-inch baking dish or 12-cup muffin tin with non-stick spray. In medium mixing bowl, whisk together applesauce, Tofutti Better Than Sour Cream, maple syrup, apple pie spice or cinnamon, baking powder, salt, vanilla extract, and optional almond extract. Stir in rolled oats.

Transfer to prepared pan and smooth top. Gently press star anise into surface and bake approximately 27 minutes or until edges are very slightly crispy, center is set, and surface is golden brown.

Remove oatmeal from oven to wire rack. Garnish with dried apple slices and spoon Creamy Drizzle over the top. Serve immediately.

Creamy Drizzle

1 tablespoon Tofutti Better Than Sour Cream

1 teaspoon water

6 tablespoons powdered sugar

Optional: 1/8 teaspoon vanilla extract

Directions:

In small cup or bowl, whisk together Tofutti Better Than Sour Cream, water, optional vanilla extract, and powdered sugar until smooth and creamy, adding more water or powdered sugar, a teaspoon at a time, until desired consistency is reached.
