Hummus Vegetable Fritters

Hummus Vegetable Fritters:

Ingredients:

1 cup any flavor hummus

2 tablespoons cornstarch

2 tablespoons flaxseed meal

Optional: up to 1 teaspoon sea salt

1/2 teaspoon ground cumin

1/2 teaspoon smoked paprika

1/2 teaspoon turmeric

3 cups cabbage and carrot slaw mix

Creamy Tahini Sauce (recipe follows)

Garnishes: roasted and lightly salted cashew halves, slivered cherry tomatoes, parsley sprigs

Directions:

Preheat oven to warm (approximately 170 degrees) and line a baking sheet with paper towel.

In a medium bowl, whisk together hummus, cornstarch, flaxseed meal, optional salt, cumin, smoked paprika, and turmeric. Use a fork to fold in slaw mix to create a cookie dough-like consistency.

Heat a large iron skillet over medium heat. Generously coat or spray skillet with vegetable oil and make six mounds using half of batter, spaced an inch or so apart. Quickly use a spatula to flatten to about 1/2-inch thick.

Cook a couple minutes or until golden brown, lowering heat if necessary to prevent burning. Flip and cook another couple minutes. Then, if desired, lightly spray tops with oil, flip, and cook a couple more minutes until the desired doneness is reached. Remove to prepared baking sheet and keep warm in oven. Repeat with remaining batter.

Serve with dollops of Creamy Tahini Sauce garnished with cashew halves, slivered cherry tomatoes, and parsley springs.

Creamy Tahini Sauce:

Ingredients:

1/2 cup Tofutti Better Than Sour Cream

2 tablespoons + 2 teaspoons tahini

Directions:

In a small bowl, whisk together both ingredients until completely combined. Cover and chill until serving time.
