Pumpkin Spice Overnight Oats

Ingredients:

2 cups rolled oats

Optional, but recommended: 1/4 cup chopped pecans, toasted if desired

2 cups non-dairy milk

3/4 cup pureed pumpkin (we use canned)

Stevia or monkfruit to taste

4 teaspoons pumpkin pie spice or to taste (or substitute a mixture of ground cinnamon, ginger, allspice, nutmeg, and cloves)

1 cup Tofutti Better Than Sour Cream, softened

1/4 cup maple syrup

Suggested garnishes: cinnamon sticks, pecan halves, and star anise

Directions:

In medium-large bowl, combine oats, nuts, and non-dairy milk. Stir in pumpkin, stevia or monkfruit, and pumpkin pie spice. Taste and adjust as desired. The consistency will be fairly thin, but will thicken dramatically.

In a small bowl, whisk together Tofutti Better Than Sour Cream and maple syrup until completely combined. Layer oat mixture and sour cream mixture into 4 jars or parfait glasses. Create either one or two layers of each mixture ending with the Tofutti sour cream and maple combination.

Cover, refrigerate overnight, and serve garnished as desired.
