Italian White Bean Peach Salad
Ingredients:
1/2 cup Tofutti Better Than Sour Cream
1/4 cup olive oil
Juice 1 large lemon
1/2 cup very loosely packed coarsely chopped fresh mint leaves
2 large cloves garlic, minced
Sea salt and freshly ground black pepper to taste
2-15.5 ounce can cannellini beans, rinsed, drained, and blotted dry
2 peaches, halved, pitted, and thinly sliced
2 cups mixed baby greens, arugula, or the tender green of your choice
Optional garnishes: fresh mint sprigs and pine nuts, toasted or not
Directions:
In medium-large bowl, whisk together Tofutti Better Than Sour Cream, olive oil, lemon juice, mint, garlic, salt, and pepper.
Gently fold in beans, peaches, and greens.
Serve immediately.
Garnish with fresh mint sprigs and pine nuts.
